If you’re like me, you wake up starving and give yourself ZERO time to cook and eat. I used to whip up breakfast (cinnamon toast) for my kids and run out the door with a banana. Fast food was never an option. I’m glad that part of my life is over.
Once every week or two, I get in the kitchen and meal prep for at least an hour. I know, it’s work. But I promise, if you put in the hour or so once a week, you’ll be much happier the following week when you have plenty of premade food in the freezer.
The ones I keep stocked are, breakfast burritos, pancakes, breakfast muffins, and homemade biscuits. I know you’re thinking, “You know, I could just get all of that at the grocery store and put it in the freezer myself. ” You’re absolutely right. You could. But have you SEEN the prices?? It’s outrageous! It costs around four dollars for two premade sausage biscuits and that’s insane to me. Biscuits are expensive, too, once you start cooking more than five a few days a week!
So, let’s get started.
Breakfast muffins:
1/2 lb sausage
3 eggs
Pancake mix
Cupcake pan
To Cook:
Brown sausage in a skillet and add eggs directly into browned sausage to cook or cook separately and mix when done. Either one will work. Add mixture to about 3 cups prepared pancake mix and stir together. Once mixed, spray pan and fill about half full like you would pancake mix. Bake on 350 until edges are tan and pulling from the pan. It should be 10-15 minutes.
To store:
Let cool and place on flat surface to freeze. I use my flexible plastic cutting boards in the freezer. After they’re frozen, I store them in freezer bags or tin baking pans and use foil as a lid. Either way will get the job done.
To prepare for breakfast:
Microwave 1 for 30 seconds or 2 for 45-60 seconds. BE CAREFUL. They may be HOT! Let cool and serve with syrup (If you’re into that).
Breakfast burritos:
1/2 lb sausage
3 eggs
Shredded cheddar cheese
Soft tortillas (Size is up to you)
To cook:
Brown sausage in a skillet and add eggs directly into browned sausage to cook or cook separately and mix when done. Either one will work. Add sausage and egg mixture into center of wrap and top with cheese. Fold and place onto cutting board to freeze.
To store:
These store best in gallon freezer bags.
To prepare for breakfast:
Microwave for 1.5-2 minutes for large wraps. 1 minute for small wraps. Time- also depends on your microwave. Always be careful when removing from the microwave. They’ll be HOT. I also serve these with syrup.
TIP: If you want to make the wraps and muffins, cook all the sausage and eggs together and half them once they’re finished to save on cooking time.
Pancakes:
Pancake mix.
To cook:
Follow cooking directions. I usually make an entire box at at time.
To store:
Place on a flat surface to freeze. Store in freezer bags or making tin.
To prepare for breakfast:
Microwave 1-2 pancakes for 1 minute. Let cool and serve with (you guessed it), syrup!
Biscuits:
Flour (self rising)
1 stick butter
Milk
To cook:
This is my personal recipe. I’ve tinkered and found that this is the easiest one. This will work with your favorite recipe. I use about 1/3 bag of flour, 1 stick melted butter, and milk. Pour the melted butter into the flour and mix with spoon or whisk until it is evenly lumpy. Break larger lumps up. Add milk until it is easy to stir but still solid. (As you can see, I don’t really measure anything. I usually go by consistency) Make sure no loose flower is at the bottom of the bowl. This will cause the final product to be inconsistent if it isn’t mixed thoroughly. Cover large cutting board or sanitized counter top with flour and place dough on it. Add flour and knead and fold until it’s ready to be made into a biscuit.
To store:
Once biscuits are ready to be cut, I use a drinking cup to cut out the biscuits and place on a cutting board to freeze. They can also be stored in freezer bags or baking tins. This recipe usually makes 20-30 biscuits depending on size.
To prepare for breakfast:
Preheat the oven to 425 degrees F. Cook for 20-25 minutes or until tan on top.
TIP: When I wake up, the first thing I do is preheat my oven and let it heat while I begin getting ready. Once it’s preheated, I put the biscuits in and let them cook while I either continue to get ready or prepare the kids’ lunches. I also sometimes put the timer on for 15 minutes, make lunches, then make eggs while I wait for them to finish cooking. However you decide to do it will work out just fine.
